Hard Boiled Eggs

Up until about a year ago, I did not know the correct way to cook hard-boiled eggs, and I've found that a lot of others did not as well. I was watching the Food Network and Ina Garten was using hard-boiled eggs and said not to overcook your eggs because you didn't want the green ring around the yolk. Well, my eggs always had an ugly green ring. I guess that's what happens whey you boil the h.e. double toothpick out of them to insure that they're done. They were done alright!

Since I have a hard-boiled egg with my smoothie every morning I wanted to find out how to properly cook them. Here's what I've found works best for me.

Cover your eggs with water and bring the water to a rolling boil over med-high heat. (I put my burner on 8).

Once the water is at a rolling boil, turn off the burner and cover the pan with a lid. (And if you're anything like me, half the time you'll forget you have eggs on the stove and they'll get the h.e double toothpick boiled out of them again).

Let sit for 9 mins. Do not remove the pan from the burner. I have done this before and my yolks were not cook thoroughly. Because of this, if you have a gas stove this method will not work. You will need to let yours sit a little longer. Sorry.

As soon as your eggs are done, place them in ice water to stop the cooking.

Now isn't that a pretty egg!

Happy Easter everyone! He is Risen!!!

Blessings,
Julie

PS - I have heard that if you're using fresh eggs, adding a teaspoon of baking soda to the water will help them peel easier. Haven't tried it, just have heard it.
